Abstract : This chapter focuses on the processing of plant food byproducts, including discussions on the extraction of relevant phytochemicals and bioactive compounds from apple pomace, grapes, cassava, defatted rice bran, citrus peels and seeds, mango peels and kernels, and mangosteen rind and seeds.
