Abstract : The sleeve is a tropical fruit used in the food processing industry where, in most cases makes use of the pulp and waste disposal that would be suitable for human diet due to its nutritional composition. The objective of this work was to evaluate physical, chemical and physico-chemical fiber and bark of mango cv. Haden. The residues were obtained from the processing of mango peeled depulper in a semi-professional for subsequent determination of color, total soluble solids, pH, titratable acidity, water content, sugars and ash. The results listed for shells and fibers were respectively pH, 4.46 and 4.34,°Brix, 14.33 and 10; acidity, 0.09 and 0.28%, ash 0.65 and 0.44%, water content 79.56% and 84.81; reducing sugar, 6.14 and 3.44%, water activity (aw), 0.99 for both and the determination of color, which found for lightness (L *) the fibers showed lighter color; for parameters a * and b * were both within the range of redness (+ a *) and yellow (+ b *). It was observed that the samples had acidic character, considerable amounts of nutrients and coloring attractive to the consumer.
