Physico-chemical changes in mangoes (Mangifera indica L.) during low temperature storage.

Abstract : The fruits of 4 mango cvs, viz. Fazali Kalan, Taimuriya, Lucknow Safeda and Summer Bahist Chausa, stored at -20 deg F were analysed at fortnightly intervals for 3 months. No visible change in colour was observed in the first 3 cvs but the 4th changed from yellow to golden yellow. After long storage the texture became soft although the fruits seemed firm immediately they were taken out from cold storage. No significant weight loss occurred during storage. Density was somewhat higher in the beginning and at the end of storage than in the middle. Acidity decreased continuously regardless of cv. and the reverse was true for the pH of the fruit pulp. In Fazali Kalan reducing sugars decreased gradually in storage and the reverse was true for non-reducing sugars. In S.B. Chausa, Taimuriya and Lucknow Safeda, both sugars were higher for some time and later decreased. In Fazali Kalan the total sugars increased continuously.
