Abstract : This special issue features 16 papers included in the Food Microstructure, InsideFood Symposium, held in Leuven, Belgium, during 9-12 April 2013. These papers explore recent scientific knowledge on food structure and its characterization, as well as its relation to physical, sensory, nutritional and health-inducing food properties. Technical lectures on microscopy, spectroscopy, tomography, emerging technologies, modelling and simulation, structure property relations, structural food engineering and applications are covered.
