Evaluation of sword mango quality from different regions of Paraiba.

Abstract : A study was conducted to evaluate the quality attributes of sword mango, collected in the morning from three commercial sites in the cities of João Pessoa, Sapé and Areia in Paraiba, Brazil. Green and yellow fruits were analysed for content of soluble solids (SS), titratable acidity (TA, citric acid), ascorbic acid, pH, and SS/TA ratio. The fruits marketed in Region 1 (coastal) had higher soluble solids content and lower acidity, showing higher SS/TA ratio, and consequently greater palatability when compared to fruits from other areas.
