Abstract : The experiment was carried out to standardize maturity days for harvesting of Kesar mango. The study was laid out in Completely Randomized Design (CRD) having six different maturity days (T1: 86-90 days, T2: 91-95 days, T3: 96-100 days, T4: 101-105 days, T5: 106-111 days and T6: 111-115 days) with four repetition. The Kesar mango harvested at 106-110 days after fruit set was found to be the best treatment for extending shelf life and quality attributes up to 21 days. Kesar variety harvested at 106-110 days after fruit set had recorded maximum marketable fruits, fruit firmness and less physiological loss in weight and spoilage as compared to rest of the maturity periods at the end of storage periods. Further, Kesar variety harvested late at 111-115 days after fruit set found superior in all quality parameters up to 18 days as compared to early harvested fruits.
