Acceptability and keeping quality of marmalades and canned slices in heavy syrup of mango cultivars.

Abstract : From 65.03 to 73.24% pulp recovery was obtained from fruit of mango cvs Irwin, Edward, Palmer and Keitt. Fruit composition of the 4 cvs before processing and the composition of the processed products during storage were analysed. After 12 months' storage, marmalade from Edward fruit and canned slices of Edward and Irwin fruit were the most acceptable.
