Evaluation of four mango cultivars for nectar.

Abstract : Irwin, Edward, Palmer and Keitt gave pulp yields of 75.07, 76.85, 73.23 and 78.95%, respectively, and had soluble-solids Brix values of 16, 21.2, 20.5 and 21.5 deg , respectively. Nectars [juices] of 25% pulp, 15 deg Brix and pH 3.7 were prepared from purees stored at -23.3 deg C until required. Nectar from Keitt was organoleptically inferior during the first three months of canned storage and after 12 months whereas nectars from Palmer and Edward were generally superior.
