Abstract : Data on the physical characteristics and chemical composition of fruit, marmalade and canned slices are tabulated for Edward, Irwin, Palmer and Keitt. All marmalade and slices were acceptable after 12 months' storage at ambient temperatures. Keitt had the largest fruits and gave the highest sliced pulp yield. Ascorbic acid content was highest in Edward.
