Abstract : Fruit firmness, texture, flavour and colour were assessed in cultivars Delicioso, Eldon and Estero del Pinar No.2 evaluated for processing as slices in syrup. Estero del Pinar No.2 is recommended on the basis of low fibre content and good firmness and organoleptic properties.
