Abstract : A review and discussion on rapid post-harvest cooling and cool storage treatments, the mechanism of chilling injury, and areas of research involved in elucidation of the physiological and biochemical processes involved. Methods used for the alleviation of chilling injury are also mentioned. The effects of pre-harvest and post-harvest chilling temperatures are discussed in relation to fruits such as tomatoes, pineapples, atemoyas, avocados, bananas, mangoes, pawpaws and guavas.
