An assessment of fruit quality of various mango cultivars.

Abstract : The postharvest quality of 17 cultivars was assessed. Subjective assessments involved appearance and eating quality. Objective assessments were based on analysis of physico-chemical factors. Orange-skinned fruits were preferred, and greenness in the skin was disliked. The combination of titratable acidity, pH and total sugar content was well correlated with overall acceptability. TSS were a poor index of quality. Cultivars differed qualitatively and quantitatively in their volatile components.
