Abstract : Fruits of both cultivars were sampled on several dates between May and July, and their physical and chemical characteristics were determined. The data are tabulated. The fruit weight, fructose and reducing sugars increased until harvest. After an initial decrease in the content of total sugars in Mallika it increased until maturity whereas in Langra total sugars increased throughout the growing period. Starch accumulation was initially slow but increased later with a concomitant increase in alcohol insoluble solids (AIS). In ripe fruits both starch and AIS declined. Water soluble pectin reached a maximum in mature fruits, namely, at 84 and 93 days after fruit set in Langra and Mallika, respectively. Alkali soluble pectin increased up to 75 days after fruit set, in both cultivars, and then declined.
