Maturity standards for fruits of pickle mangoes.

Abstract : This study was carried out to identify the most suitable maturity stage for harvesting fruits of the pickling cv. Dedseri. Changes in fruit volume, total soluble solids and acidity were recorded at 4-day intervals between 9 April and 12 June. Fruits harvested on 15 and 29 May, and 12 June, were pickled and the pickles were evaluated after 3, 6 and 12 months' storage. Pickles made from the less mature fruits of the first two pickings were better. The best stage for harvesting appears to be just after the beginning of endocarp hardening when little reduction in acidity and increase in soluble solids has occurred.
