Abstract : Baneshan mangoes were harvested weekly from late April to mid-June; data are presented on the ripening rate, organoleptic evaluation and physico-chemical characteristics of fruit from each picking. Neither the ripening rate nor the fruit quality was related to its size. The critical period for maturity lay between 26 May, when much of the sample picking ripened well, to 2 June, when all fruit did so. A distinctive change in flesh colour from white to creamy-yellow occurred at this time and this was a simple and reliable, if destructive, test of maturity.
