Volatile aroma constituents of mango (cv. Kensington).

Abstract : The aroma volatiles of the cv. Kensington, analysed using routine procedures, were compared with those of other cultivars previously reported in the literature. Fifty-eight constituents were identified, including 36 not previously reported for cv. Kensington and 7 not previously recorded in any mango. Monoterpene hydrocarbons represented nearly 49% (w/w) of the total volatiles, with ?-terpinolene at 26% being the most abundant single constituent, and 16 esters represented 33%. The esters, together with some lactones important also to peach flavour, contributed to the unique flavour of cv. Kensington.
