Abstract : The rate of the marked changes occurring during fruit ripening can have an important effect on storage life and export potential in mangoes. A study on the suspected relationship between these ripening changes and cell wall degradation is outlined. It appears that pectin polymers become less tightly bound in the cell walls during ripening, and that this wall loosening involves hydrolysis of galactose-containing polysaccharides. Pectic polymer composition differed between fruits of cv. Sensation which soften quickly during storage and those of cv. Tommy Atkins which have a long storage life.
