Abstract : Irwin mango fruits have a typical single sigmoid growth curve. Fruits grown in Yuchin, Taiwan, took 120 days from anthesis to reach full ripeness. The endocarp hardened 75 days after anthesis. Skin colour began to change gradually from green to red 70 days after anthesis whilst pulp colour began to turn yellow after 60 days. Fruits reached their maximum volume and fresh weight in 90 days, with dry weight continuing to increase until ripe. Fruits harvested 90 days after anthesis could be ripened to an acceptable quality after exposure to 100 p.p.m. ethylene for 3 days. The fruits had an outgrown shoulder and a depressed stem-end when fully grown. Days from anthesis and morphological changes can be used as maturity indices.
