Abstract : This document is based on a literature search. The principles of oil extraction and (in part III) the distillation of essential oils are described. The three main parts of the document comprise monographs. Each monograph is divided into 4 sections: (1) General: giving details of common, botanical and local names, climatic requirements, main producing countries, oil yields and characteristics, and main crop uses; (2) Agricultural aspects (cultivation, harvesting period and harvesting method); (3) Postharvest treatment, preservation and storage; and (4) Processing (processing method, oil extraction, major fatty acid composition of the oil, local products and equipment). References are given at the end of each monograph and gaps in current knowledge are identified. At the end of each part, the known applications of the oils in that part are summarized.
