Abstract : Mango stones are usually discarded, but they could be an important source of edible fat (c. 10% content). The fat has physical characteristics similar to those of cocoa butter. Both are rich in stearic acid, but they differ in palmitic acid and glyceride contents. Recovery of mango stones, their cleaning, drying and decortication, and the extraction, purification and composition of the fat, are reviewed. Defatted mango kernel is rich in starch and protein and could be used in animal feed, as plant manure, and in the textile, jute and paper industries.
