Abstract : Dashehari and Mallika mango fruits were dipped in 1% and 1.5% solutions of Tal-prolong, a sugar-based formulation [sucrose esters]. Tal-prolong at 1% gave the best retention of fruit colour, flavour and texture over a period of 15 days' storage.
