Abstract : The postharvest quality and longevity of fruits is largely determined by the onset and rate of ripening. Ways in which ripening processes can be studied are discussed. Preclimacteric respiration, the regulation of autocatalytic ethylene production and the role of polygalacturonase isoenzymes in fruit softening are examined with reference to a range of climacteric fruits but principally to tomatoes, Annona muricata and mangoes.
