Abstract : Experiments were conducted to study the effect of handling and storage temperatures on the respiratory rate of mangoes. An initial linear relationship was observed between the respiration rate of mangoes and storage temperatures between 13 and 30°C. The climacteric respiratory rate can be taken as an index of storage life of the fruit. Delayed ripening was observed above 35°C, affecting the normal respiratory pattern. Models for predicting respiration rate, deterioration rate and shelf life were developed.
