Abstract : The role of climate, locality, time of harvest, maturity stage, tree age, nutritional status and microorganisms in the development of spongy tissue are considered. Differences in chemical composition and enzyme activity of healthy and affected fruits are discussed. The symptoms of the physiological disorder known as soft nose are described and possible causes are discussed. Possible areas for future study are suggested.
