Abstract : Physiologically mature fruits (cv. Bocado) were harvested (a) when both ends of the fruit were slightly yellow or (b) when still hard. The fruits were treated with Ethrel [ethephon] at 2000 or 4000 p.p.m. and held for 16 days at 25 ± 3°C and 55-60% RH or 15 ± 1° and 85-90% RH. At both temperatures, treatment with ethephon at 2000 and 4000 p.p.m. shortened the ripening time, with both concentrations giving similar results. For optimum edible quality, the best results were obtained with ethephon at 2000 p.p.m and holding at 25° and 55-60% RH. Also, pulp from these fruits kept well for 3 months at -10°.
