Abstract : A short discussion of modified atmosphere packaging, with particular reference to the advantages of equilibrium modified atmosphere (EMA) which would allow delayed harvesting of fruits such as mangoes and permit natural ripening and full flavour development to proceed almost to completion before packaging.
