Abstract : Fruits from 2 Kaew mango clones, SK002 and SK007, were harvested at weekly intervals from 11 to 15 weeks and from 11 to 14 weeks after full bloom, in 1987 and 1988, respectively. Batches of fruits were pickled in 10% NaCl with 0.1% sodium benzoate. Fruit quality was assessed initially and at intervals after pickling. Sensory evaluation was made 1 month after pickling. Fruits pickled from the harvest 11 weeks after full bloom had significantly poorer quality and acceptability than fruits harvested later. The earliest acceptable harvest was 12 and 13 weeks for SK007 and SK002, respectively. Pickling for more than 5 months adversely affected quality.
