Effect of skin coating on shelf life and quality of 'Nang Klangwan' mangoes.

Abstract : Mature green fruits were dipped in 0, 1, 2 or 3% Semperfresh (a commercial skin waxing product) and held at ambient temperature (32°C and 74% RH). Changes associated with ripening were compared with those in untreated fruits. Fruits coated with 2 or 3% Semperfresh produced off-aromas within 6 days but the fruits treated with 1% Semperfresh ripened normally though they were slightly inferior in taste to the controls. The shelf-life of fruits waxed with the 1% treatment was 14 days and that of the controls was 10 days. The treated fruits had inferior colour development, lower weight loss, lower TSS, higher total acids and firmer flesh compared with controls.
