Abstract : Methods of extending the shelf life of tropical fruits are briefly discussed. Research on fruit softening, particularly on the role of polygalacturonase, ?-galactosidase and other cell wall hydrolases in mangoes, pawpaws and to a lesser extent, guavas and Averrhoa carambola, is reviewed.
