Abstract : A review is presented on the effect of various enzymes (polygalacturonase, cellulase, pectinesterase and other cell wall hydrolases, carbohydrate metabolizing enzymes, ethylene related enzymes and others), at the physiological and molecular level, on the ripening and softening of mango fruits. The information is discussed in relation to work on genetic engineering in other fruit crops.
