Abstract : Of the 10 mango cultivars evaluated, La Paz, San Felipe, Santa Cruz and Señora were considered suitable for processing for pulp production in view of their high pulp yield and good pulp flavour, colour and aroma. The following cultivars were considered unsuitable for pulp production: Chino Rojo, Mameyson, Mario, Minin, Reina de México and San Diego.
