Studies on mango exudate in relation to fruit maturity.

Abstract : In 2-year studies with mangoes, cvs Dashehari and Langra, fruits were marked immediately after fruit set and samples of the same physiological age were picked at weekly intervals from mid-May to early July. Analyses were made of the exudate from the stalk-end of the fruits at different harvest dates, and data are presented on changes in pH, total phenolics and sugars content. The pH level of both cvs gradually fell at the later picking dates. Total phenolics content changed little in Dashehari but in Langra there was a marked decline during June. The sugars content rose rapidly from mid-June onwards, sucrose being predominant.
