Effect of maturity on canning quality of mango (Mangifera indica L.) cv. Dashehari.

Abstract : Mango fruits, cv. Dashehari, were picked at weekly intervals from 22 May until 30 June and analyses were made of their physical and chemical characteristics, respiration rate and taste. Fruit size increased throughout the harvesting period. Fruit firmness rose to a maximum in early June, followed by a decline which was most marked during the last week. Respiration rate declined until 18 June, when it rose sharply, indicating the onset of the climacteric rise, which attained a maximum on 24 June. Quality characteristics, including taste, were at their best during the last week or two of June.
