Abstract : Mango (Mangifera indica L.) cv. Oro, common in Tehuantepec Isthmus, Oaxaca, Mexico, was analysed for vitamin A and C content and other physicochemical properties. Processing produced an intermediate moisture product packaged under vacuum conditions, using 3 plastic films: surlyn-nylon-polyethylene l.d., nylon-polyvinyl alcohol-polyethylene l.d., and aluminium-polyethylene l.d. These were stored at 12, 20 and 37°C for 6 months in the dark. Aluminium-polyethylene packaging gave the best stability to the product regarding moisture content and sensorial attributes.
