Effect of chilling injury on two scavengers of free radicals of mango fruit.

Abstract : Fruits of cv. Zhihua stored at 2°C for 15 days developed chilling injury. The fruits showed slightly increased superoxide dismutase (SOD) activity and a decline in catalase (CAT) activity under these conditions, indicating that membrane-lipid peroxidation was enhanced. Fruits stored at 10° started to ripen after 20 days, which coincided with peak activities of SOD and CAT.
