Against all odds: women and solar drying of vitamin A-rich foods.

Abstract : A project established to improve the availability of vitamin A-rich foods in a region of Haiti is examined. A group of Haitian women working with the Save the Children Fund/Haiti (SCF), through the USAID-supported Vitamin A Field Support Project (VITAL), developed a method that allows the solar drying of a variety of fruits (initially mango), to preserve vitamin A content. The experience of the pilot group, Fanm Decidé is described, noting the success of this project which led to the training of 76 women's groups. Following this, a group from the Dominican Republic, Fundación para el Desarrollo Comunitario, Inc. took the technology back to the Dominican Republic, where they trained 16 women's groups. The development of technology and experience from these groups is noted.
