Abstract : The nature of latex and its distribution in resin ducts throughout the exocarp and mesocarp of mango fruits is described. Factors affecting the amount and intensity of sap flow after harvest are considered together with the degree of injury induced in fruits and methods of controlling flow and injury. The biochemistry of browning and injury to fruit tissues is discussed and the economic importance of injury and potential methods of reduction are reviewed.
