Abstract : Data on properties of the fruit juices of the Pyri and Baladi varieties are tabulated. That of Pyri had a much higher viscosity but a lower total solids content. Its contents of carotenoids, ascorbic acid and aromatic substances were significantly higher than those of Balady and its acidity was less. Mixtures of the two juices showed intermediate values in most properties but in certain proportions had stronger coloration and higher soluble solids and total sugar contents than either variety possessed alone.
