Abstract : A study is presented to examine the per-factory and per-unit cost of processing mango into different products in Ratnagiri District, Maharashtra, India. Data are presented collected from four pickle making, two chutney making and six raw slices making factories for the production season 1987. The ex-factory cost of the processing of pickle, chutney and raw slices in brine worked out to Rs 220?000, Rs 108?000 and Rs 363?000 respectively. The per quintal cost of processing came to Rs 887.06 for pickle making, Rs. 1308.51 for chutney making and Rs 257.07 for making raw slices in brine. The input-output ratio worked out to 1:1.64 for pickle, 1:1.59 for chutney and 1:1.14 for raw slices in brine. The analysis showed that preparing pickle from the local variety of mango fruits was the most profitable followed by chutney and raw slices in brine.
