Comparative study on changes in the activities of amylase and invertase of different varieties of mango at different maturity levels.

Abstract : The activities of amylase and invertase in 10 cultivars of mango at different maturity stages (immature, mature and ripe) were determined. The highest amylase and invertase activities were observed in Himsagar followed by Fazli, and the lowest in Aswina, at the mature stage. The activities of the enzymes peaked at maturity in all cultivars. Aswina showed the lowest amount amylase and invertase activities at all stages.
