Abstract : Kent mangoes were stored for 25 days at 13°C in air or in controlled atmospheres (5% CO2 + 5% O2 or 10% CO2 + 5% O2). Percentage soluble solids (SSC), titratable acidity, flesh firmness and colour, physiological weight loss, respiratory activity, histological changes, flavour and aroma were evaluated at intervals during storage and after 5 further days at 25° in air. There were no significant differences among treatments for SSC, titratable acidity, flesh firmness, flesh colour and physiological weight loss. However, after 21 days of storage, sensory tests indicated off-odours and off-flavours in samples stored in controlled atmospheres. It is concluded that controlled atmospheres did not have any benefit over refrigeration in extending the storage life of Kent mangoes.
