Abstract : Haden mangoes harvested from 5-year-old trees in Camatagua, Venezuela, were treated with 250 ppm ethylene, using an ethylene catalytic generator, for 12 h. The fruits were then coated with 1% Prolong [sucrose esters] or the waxes Fomesa or Primafresh, and were stored at 12, 18 or 25°C for up to 20 days. Colour, soluble solids content, titratable acidity, total soluble solids (TSS):acidity ratio, pH, percentage dry matter and fresh weight loss during storage were determined. L and chroma values were higher after storage in fruits treated with Prolong than in control fruits or fruits treated with Fomesa or Primafresh. Hue values remained close to zero throughout storage. Ethylene application increased L values and fruit colour at ripening. The coatings had no effect on TSS. Ethylene application increased the TSS:acidity ratio. Dry matter content and pH were lowest after 20 days of storage. TSS decreased with storage duration, particularly in fruits stored at high temperatures. A fresh weight loss of 6.2% occurred when fruits were stored at 25° for 20 days. Ethylene application and treatment with Prolong resulted in good colour and uniform ripening after 20 days of storage at 12 or 18°.
