Abstract : Production conditions and processes are described that promote the production of well-coloured fruits for the EU markets by Peru, including sandy soils low in N; virtually no rainfall (60 mm); little cloud cover; tropical, coastal desert climatic conditions at sea level with sufficiently cold nights in winter; no wind problems; appropriate cultivar choice (Haden and Kent); and generally low levels of fertilising and high levels of irrigation. The dry climatic conditions further result in the total absence of anthracnose, blossom blight, soft-brown rot, blossom-malformation and bacterial black-spot. The hot-water treatments used by Peru to control fruit fly as a phytosanitary measure for export to the USA and other countries include 90 min at 45.6°C for fruits larger than 415 g and 75 min at 45.6° for fruits smaller than 425 g. After hydrocooling, fruits are packed and shipped at 10° using integral containers, without CA.
