Physiological changes associated with ripening in two mango varieties.

Abstract : The biochemical parameters responsible for slow ripening in mango cultivars Ramkela and Amrapali were examined. Respiration rate, polygalacturonase (PG) and malic enzyme (ME) activities along with free amino acids and soluble sugar content were determined. Respiration rate was very low in Ramkela fruits and continued low for about 10 days. In Amrapali, a burst in respiration within a couple of days after harvest was observed. PG and ME activities were also low initially in Ramkela and remained low compared to Amrapali fruits for more than 10 days.
