Abstract : Browning is a major concern during the export of subtropical fruits. It may render the fruits unmarketable or affect their appearance and ultimately their market value. Browning is caused by any of a number of different factors, depending on the type of fruit. An overview is given of investigations into the causes of browning in avocados, mangoes, pineapples, pawpaws and litchi.
