Abstract : Totapuri mangoes were harvested 2 weeks before optimum maturity and treated with Ethrel [ethphon] at concentrations of 0, 500, 750 or 1000 ppm in hot water at 52°C for 5 minutes. Fruits were then air-dried, packed inwooden boxes with newspaper as lining material and stored at room temperature (28-34°C). Ethrel-treated fruits developed a yellow colour in 4-6 days with asimultaneous increase in TSS and decline in flesh firmness and titratable acidity. Untreated fruits ripened more slowly and were less acceptable for marketing when ripe than treated fruits.
