Ripening, storage temperature and controlled atmosphere in mangoes.

Abstract : An overview is presented of factors (including ethylene levels and cultivar choice) influencing the optimum harvesting date for the ripening of mangoes. Temperature is the main factor influencing storage decay, while cultivar, ripening stage and harvesting date are less important. Advantages and disadvantages of controlled atmosphere storage (controlling gas levels at 21% O2, 79% N and 0.03 CO2) are described.
