Respiration model for edible coated minimally processed mango.

Abstract : Respiration models for edible-coated minimally processed (ECMP) and MP mango fruits are presented. The maximum rate of oxygen consumption (RO2max), and the oxygen internal partial pressure at half of RO2max (K1/2), were determined for Arumanis mango (grown in Java, Indonesia). The SOPs (Standard Operation Procedure) for MP and ECMP mangoes are presented. Empirical models were developed for storage temperatures of 5-25°C. Quality changes in ECMP mango during storage were also observed. The critical quality parameters are yellowness and hardness, which are influenced by temperature and can be expressed in Arrhenius equations. The application of an edible coating to MP mangoes slowed respiration and loss in quality. Quality was maintained for longer at lower storage temperatures.
