Abstract : Fruits of mangoes cv. Palmer were stored at 22.8-25.2°C and 69.5-80.6% RH or 13±1°C and 85-90% RH, and were not packaged, packed in plastic trays covered with PVC film with or without potassium permanganate, or packed in cardboard boxes, lined inside or not with plastic film containing potassium permanganate. The fruits stored at the lower temperature were transferred after 20 days to ambient conditions. Storage at low temperature delayed the ripening of the fruits. Packaging decreased weight loss, mainly at the lower temperature, but did not affect changes in titratable acidity, total soluble solids, soluble carbohydrates or vitamin C. Potassium permanganate had no significant effect.
