Activities of glucosidase and galactosidase enzymes during fruit development of ten mango varieties.

Abstract : The activities of ?- and ?-galactosidase, and ?- and ?-glucosidase in the pulp of 10 mango cultivars (Fazli, Langra, Khirshapat, Kazlasundori, Kishanbhog, Himsagar, Ranipasand, Gopalbhog, Lata Bombai and Aswina), at 3 ripening stages (immature, mature and ripe), were investigated. The activities of all these enzymes increased with degree of maturity and the activities of ?- and ?-galactosidases increased more rapidly than those of ?- and ?-glucosidases. Kirshapat exhibited the highest activites of ?- and ?-galactosidases. Himsagar had the highest ?-glucosidase activity, and Fazli had the highest ?-glucosidase activity. Aswina had the lowest ?- and ?-galactosidase, and ?-glucosidase activities, while Lata Bombai had the lowest ?-glucosidase activity.
